Sort of Menu Planning

You've probably noticed that my menu posts have been… missing lately. Honestly, with boyfriend being SO busy at work (and having lots of dinners out with his company), and my very limited diet due to my dental issues (um milkshakes, mashed potatoes and oatmeal), I just haven't been planning them. I've just started in the past week eating normal food again, so I'm going to start up with them again. However, boyfriend is starting a week long diet of protein shakes and simple foods like almonds and veggies and then we'll start him on a more food based diet next week, so for this week it's going to be for just me.

Monday
Breakfast: Tea and Whole Grain Toast
Lunch: Avocado and Cucumber on Whole Grain Wrap (with a little salsa), Strawberries/Blueberries
Dinner: 1/2 grilled cheese on Whole Grain Bread, carrot sticks, apple w/ a small amt of peanut butter

Tuesday
Breakfast: Mocha w/ fat free creamer / Whole Grain Toast
Lunch: salad w/ baby spring lettuce, strawberries, avocado, cucumber, carrots and light balsamic vinegarette / whole grain crackers w/ wedge of light laughing cow cheese
Dinner: oatmeal topped with almonds and flax seeds / strawberries

Wednesday
Breakfast: Tea and Whole Grain Toast
Lunch: whole grain wrap with strawberries, cucumber and spring mix with a smidge of balsamic / blueberries
Dinner: cheerios topped with blueberries and a small amount of cracklin oat bran

Thursday
Breakfast: Tea and Whole Grain Toast
Lunch: Avocado and Cucumber on Whole Grain Wrap (with a little salsa), Strawberries/Blueberries
Dinner: 1/2 grilled cheese on Whole Grain Bread, carrot sticks, apple w/ a small amt of peanut butter

Friday
Breakfast: Mocha w/ fat free creamer / Whole Grain Toast
Lunch: salad w/ baby spring lettuce, strawberries, avocado, cucumber, carrots and light balsamic vinegarette / whole grain crackers w/ wedge of light laughing cow cheese
Dinner: tortilla chips, salsa and avocado

For the weekend, I'll most likely eat sandwiches and veggie burgers… along with fruits and salads.
And for snacks, I have almonds, trail mix, fruit and veggies. Thrilling. I know I should cut out cheese altogether, but I'm trying to use up what we have, especially now that boyfriend won't be eating any of it. I just hate for food to go to waste…

So my groceries shouldn't be too bad… bread, lettuce, carrots, string cheese (for boyfriend), strawberries. I have everything else.
